烹饪&/a&）。&/p&&br&&p&先不下结论“法国特色”是好是坏，但它是存在的，从不为人知的米其林食探培训过程就能看出一二。2009年一篇《纽约客》文章小小地揭开了米其林食探的神秘面纱。原来所有的食探候选人都需要到法国接受米其林的培训，再飞到另外一个欧洲国家继续接受培训，然后回到米其林开展业务的地方（in this case是纽约），花3-6个月作为一名欧洲籍的资深食探的学徒，过关后才能成为真正的inspector。这样的食探又会怎样评价欧洲以外的餐厅呢？&/p&&br&&br&&p&&b&首次离开欧洲的星级水准体系&/b&&/p&&p&正是这种“法国特色”，让米其林在首次跨出欧洲大陆的时候在外地受到质疑。2005年11月发布的纽约版米其林指南由五位欧洲籍的食探编成，《时代周刊》报道说拿到两星或三星的店当中超过一半都可以算是法国餐。备受&i&Zagat&/i&和《纽约时报》推崇的Daniel法餐厅的老板和主厨Daniel&br&Boulud（跟北京已闭业的布鲁宫Maison Boulud同人），本身就是在法国长大的法国人，也提到米其林的评价体系着重于一种特定的法系烹饪要求，而这种要求不适用于法国和欧洲以外的地方（后来Daniel餐厅在2010年拿到三星，不过2015年版本又降回二星了）。在洛杉矶（和拉斯维加斯）就更严重，洛杉矶只评选出4所两星餐厅和0所三星餐厅，让本土媒体和吃货的蛋蛋疼，说米其林的“法式”食探不懂得欣赏南加州对于fine-dining的解读，导致小红书只推出了年两个版本就离开了。&/p&&p&&figure&&img src=&https://pic4.zhimg.com/fdf52e6f416bb4c60053_b.jpg& data-rawwidth=&1280& data-rawheight=&640& class=&origin_image zh-lightbox-thumb& width=&1280& data-original=&https://pic4.zhimg.com/fdf52e6f416bb4c60053_r.jpg&&&/figure&图：纽约 Daniel&/p&&p&来自：官网&/p&&br&&br&&br&&p&&b&修改后的星级水准体系&/b&&/p&&p&车胎人公司并没有放弃国际扩展，在2007年进入东京，2009推出香港/澳门版本，在日本和港澳地区没有像美国那样那么多的反对声音。其中一个有争议的原因是小红书的编辑们吸取了在美国的教训，变得更加“本地化”。比如香港的“添好运点心专门店”，号称世界上最便宜的米其林餐厅，几十港币就能够吃饱，位于大角咀、北角、深水埗等地方的几家分店的装潢一点都不富丽堂皇（唔该睇睇佢地张menu，1D都唔高大上），但好几家店都拿到一颗星，现在遍布东南亚了，在台湾也有添好运的分店。“何洪记”虽然由路边搬到商场里面，但系云吞面一样系35蚊碗一样好好食。还有“甘牌烧鹅”和“一乐食馆”这种地道小店，都是2015版本新登榜的1星餐厅。新斗记是我回香港时比较喜欢去的店，进门几排大鱼缸，台上用了n&br&年的白桌布有一个个被烟头烫出来的窟窿，是街上比比皆是的典型海鲜酒楼，我是没多久前才知道原来一度是星级餐厅，我一直只是喜欢他们那种有手臂那么粗的濑尿虾。&/p&&p&&figure&&img src=&https://pic2.zhimg.com/ed30ab18b05_b.jpg& data-rawwidth=&1280& data-rawheight=&640& class=&origin_image zh-lightbox-thumb& width=&1280& data-original=&https://pic2.zhimg.com/ed30ab18b05_r.jpg&&&/figure&图：香港 添好运&/p&&p&来自：官方Facebook&/p&&br&&p&所以，说不定很多“苍蝇馆子”，只要环境不是糟糕到真的苍蝇满天飞或者厨房油烟会影响到食探嗅觉的地方，真有可能达到“星级的水准”。
&a data-hash=&685ea0b4e856a4c694d9b1e39f1dea67& href=&//www.zhihu.com/people/685ea0b4e856a4c694d9b1e39f1dea67& class=&member_mention& data-editable=&true& data-title=&@David Rand& data-hovercard=&p$b$685ea0b4e856a4c694d9b1e39f1dea67&&@David Rand&/a& 在问题的评论中提到的西双版纳某小镇农家乐，也许就会是中国的L'Auberge du Vieux&br&Puits（法国最新的三星的餐厅，在2010年升级，位于小镇Fontjoncouse，这小镇在2008年人口为...131人，最近的城市是33km外的Narbonne…反正在办公室里地理知识连续多年称霸的我，是没听说过这些地方的）。&/p&&br&&br&&p&&b&国内（大陆）哪些餐厅能到到星级水准&/b&&/p&&p&无论是有“法国特色”的米其林指南，或者是所谓“本地化”的版本，究竟国内（大陆）哪些餐厅能够达到米其林星级标准呢？最保险的一种猜测，就是已经拿到过米其林星星的品牌，尤其是不同城市多家分店都能够拿到星星的，因为这说明团队已经找到一种可以被复制的并且达到星级标准的体系。&/p&&blockquote&典型的例子就是在国内几个城市都落地的利苑，香港的多家（不是每家）分店都拿到星星。香格里拉的香宫和夏宫系列中餐厅，除了在香港都榜上有名以外，甚至在巴黎香格里拉的香宫也是一星级的食府，所以也许广州的夏宫和深圳的香宫就会入选。还有朗廷酒店的唐阁也是同样道理。伦敦Hakkasan（两家）和纽约分店都一直拿着星，那么上海外滩的Hakkasan也应该算得上星级标准。&br&&br&还有就是星级大厨下面特定的品牌，比如Jean-Georges Vongerichten有很多餐厅，他的纽约Jean Georges餐厅是三星餐厅（不是Samsung思密达），但是旁边的Nougatine就没星（Nougatine就好比是iPhone 5C...同样内核但感觉casual些），所以在上海外滩的Jean Georges很可能是米其林喜欢的那种店，但上海的Nougatine（也在上海JG旁边）可能就不行。白松露王Umberto Bombana的8 1/2
