width=&400&&&/figure&&p&在控制栅加正电压，将电子（带负电）吸入浮动栅。在此后，由于浮动栅上下的二氧化硅材料并不导电，这些电子被囚禁（Trap）在浮动栅之中，出不去了。这样无论今后控制栅电压有否，这个状态都会保持下去，所以闪存可以掉电保存数据。注意写操作完毕后，该闪存单元存储的是&b&0&/b&，后面我们将会介绍为什么。&/p&&p&我们的擦除操作（Erase）刚好相反：&/p&&figure&&img width=&400&&&/figure&&p&在源极加正电压利用浮空栅与漏极之间的隧道效应，将注入到浮空栅的负电荷吸引到源极，排空浮动栅的电子。这时读取的状态是1。&/p&&p&那为什么有电子是0，没电子是1呢？以为读取的时候，需要给控制栅加一个低的读取电压，对于被Program过的闪存单元来说，被囚禁的电子可以抵消该读取电压，造成源极和漏极之间是处于被关闭的状态：&/p&&figure&&img width=&400&&&/figure&&p&也就是说通过向控制栅加读取电压，判断漏极-源极之间是否处于导通状态来读取闪存单元的状态，如果被Program过的，就是处于关闭OFF状态，为0；而被Erase过的，就是处于导通状态ON，为1。&/p&&p&理论上来说，闪存可以每个单元来单独擦除和编程。但是为了节省成本，实际上作用在控制栅上的擦除电压是整个块（Block）连接在一起的，这就是为什么擦除要以块为单位了。&/p&&h2&&b&为什么闪存会损坏&/b&&/h2&&p&每次电子在包围浮动栅的二氧化硅上进进出出，都会造成它的老化：&/p&&figure&&img Cycle。&/p&&h2&&b&结论&/b&&/h2&&p&闪存单元的损坏是个不可逆的过程，坏了就是坏了，人死不能复生，节哀顺变吧。几个坏块不会产生多大问题，OP空间完全可以罩得住，问题是只要产生坏块，慢慢坏块会越来越多，写放大也会越来越严重，慢慢的就会产生读写错误，或者速度严重下降。这时我们一定要考虑换块SSD了。&/p&&p&也许仅仅依靠抽象的判断速度对普通用户并不是很好掌握。就像买西瓜都要拍一下，实际上估计很多人都是做个样子而已。真正科学判断SSD的状态要靠SMART(Self-Monitoring 过年成了重灾区，很多朋友走亲访友都被逼着喝了自酿酒。又把这个答案重新整理了一遍，详细把不推荐喝自酿酒的原因清楚地阐述了一下。&br&——————————————————&br&这其实是一个很严肃的问题，但很遗憾最后大家可以投票的只有一个调笑的答案。&br&&br&关于自酿葡萄酒，我们曾经专门写过一篇&a href=&//link.zhihu.com/?target=http%3A//tastespirit.com/p/15060.html& class=& wrap external& target=&_blank& rel=&nofollow noreferrer&&为什么不推荐你喝自酿酒？&/a&，应该把不推荐的原因都讲清楚了：&br&&br&&b&为什么不推荐你喝自酿酒？&/b&&br&&br&&b&作者：王鑫/知味葡萄酒杂志&/b&&br&&br&&p&每年过年的时候，亲戚中总有几个长辈跑来“哟，小王，听说你做品酒师的，快来尝尝我自己酿的，比街上买的好喝”。唉，每年都要想办法委婉地拒绝，还得想办法用他们能接受的方式规劝他们不要在家里自酿葡萄酒了。为什么？请听我耐心解释给你听。&/p&&br&&figure&&img src=&https://pic2.zhimg.com/50/743d589ae24faa91dd3bb9_b.jpg& data-rawwidth=&630& data-rawheight=&420& class=&origin_image zh-lightbox-thumb& width=&630& data-original=&https://pic2.zhimg.com/50/743d589ae24faa91dd3bb9_r.jpg&&&/figure&&i&图片来源：winefolly&/i&&br&&br&&b&饮用自酿酒的健康隐患&/b&&br&&br&&p&知味的办公室里有自动发酵烘烤的面包机，我们也喜欢自制酸奶，唯独亲友自酿葡萄酒这件事，我是彻底的敬谢不敏。同样都是自家发酵制品，对自酿葡萄酒额外的不感冒，最主要的原因应该是中毒的风险。&/p&&br&&p&也许是“下馆子不如自家厨房做”同样的心理，很多人都觉得亲自动手制作的食物和饮料要比买回来的出色。“家里做的”，“奶奶家的味道”，“外婆自己喂大的走地鸡”，这些描述都带着家的浓情和安全感，在这个“面包店被曝光用过期面粉”，“大品牌的牛奶里检出三聚氰胺”的年代被格外珍视。但冷静地想一想，&b&这要喝下去的东西，真的因为是亲爱的姑妈自家酿的就安全了吗？&/b&&/p&&br&&p&在家里酿葡萄酒，“葡萄原料不做农残检测”、“开水烫一下来杀菌”，“温度靠室温变化”，“饮用前不经任何食品安全检测”……这些即使是最糟糕的葡萄酒生产厂，都未必能同时出现这么多有可能带来食品安全的风险。&/p&&br&&p&&figure&&img src=&https://pic3.zhimg.com/50/8b5ef76bd8d8686bd7ad_b.jpg& data-rawwidth=&640& data-rawheight=&446& class=&origin_image zh-lightbox-thumb& width=&640& data-original=&https://pic3.zhimg.com/50/8b5ef76bd8d8686bd7ad_r.jpg&&&/figure&&i&酿酒葡萄（左）与餐食葡萄（右）的对比，图片来源：winefolly&/i&&/p&&br&&p&通常家庭自酿选用的葡萄都非酿酒时使用的酿酒葡萄品种，而是像巨峰、马陆葡萄这样的餐食葡萄品种。专业的酿酒过程会尽量应用到葡萄外皮表面的天然酵母菌，所以通常不会对葡萄进行清洗，因此也会对农药残留有很严格的把关，在条件允许的情况下在采摘前尽量早的时候尽量少地使用农药。家庭酿造不会做农残检测，采用的葡萄使用农药的情况也不清楚，只能依赖于对外皮的清洗来尽量降低农药残留。食用这些葡萄时人们通常会吐出葡萄皮，受农残毒害风险较小，但酿酒时必需的浸皮萃取过程势必把一些残留的农药带入自酿酒中。&/p&&br&&p&葡萄酒的发酵酿制过程其实并没有大家所想象的“酵母菌把糖变为酒精”那样简单。在家庭这样通常用开水来比较随意地杀菌消毒的环境，有害微生物超标的问题有可能出现。有害微生物在葡萄酒的发酵过程中会产生一定量的杂醇（甲醇和其他乙醇以外的高级醇类），它们比乙醇对神经系统有更强的毒性，达到一定量直接带来的身体反应就是头疼。常听人说喝自酿酒容易醉或是“后劲足”，并非家里拼拼凑凑的环境能比酒厂标准设备条件下发酵出更高的酒精度，而很可能是因为杂醇含量超标而导致的。因为甲醇对视网膜和视神经极强的选择性伤害，甚至还出现过喝自酿酒险些失明的案例。&/p&&br&&p&另外，出现有害微生物风险还存在地域性的差异，比如我的家乡新疆，就比别的省份高发因食用自制发酵豆制品而引发肉毒毒素中毒的案例。&/p&&br&&figure&&img src=&https://pic1.zhimg.com/50/feffe139a24c708bc8d44f_b.jpg& data-rawwidth=&406& data-rawheight=&617& class=&content_image& width=&406&&&/figure&&i&叔叔，我们不喝&/i&&br&&br&&p&有人说，&你是不是在危言耸听，想让所有喜欢自酿酒的人都去买葡萄酒。我家自酿的酒我喝了一点事儿也没有。而且古人没有现代酒厂的技术条件也好好酿了近千年葡萄酒，我家亲戚技术还比不上古人吗？”&/p&&br&&p&首先这篇文章的目的是为了提醒大家注意饮用自酿葡萄酒存在风险，并不是说所有的自酿酒都存在饮用安全问题。我认识一些真正的“自酿发烧友”，大家凑钱买了一套小型酿造设备，找酿酒师朋友指导学习正规的酿造方法，当然这简直是开酒庄的节奏了....没这么豪气的自酿葡萄酒爱好者，近年来也有机会通过一些国产酒庄推出的“专业自酿服务”，到酒庄的酿酒车间里参与现代工艺酿酒的全过程，然后把自己亲身参与酿制的酒买回家。&/p&&br&&p&而关于“不使用现代技术的古人不也健康幸福地生活着吗”的问题，通常我们称之为“玫瑰色的怀旧想象”。很多人也很难想象当年法国皇室居住的凡尔赛宫里其实到处是虱子。要知道，在巴斯德发明巴氏消毒法之前，葡萄酒和啤酒酿好之后很容易变酸（微生物活动）一直是困扰人们的问题。在葡萄酒发酵过程的微生物学认识的基础上，才发展出了现代酿酒业，酒庄酿制的葡萄酒品质和安全性才得以显著提升。如果你亲戚家自酿酒的时候注意严格对所有承装的容器进行沸水杀
