We tested the feasibility to record an auditory steady state evoked response (ASSR) at the binaural beat frequency in order to find a measure for temporal coding of sound in the human EEG.METHODS: We stimulated each ear with a distinct tone, both differing in frequency by 40Hz, to record a binaural beat ASSR. As control, we evoked a beat ASSR in response to both tones in the same ear. We band-pass filtered the EEG at 40Hz, averaged with respect to stimulus onset and compared ASSR amplitudes and phases, extracted from a sinusoidal non-linear regression fit to a 40Hz period average.RESULTS: A 40Hz binaural beat ASSR was evoked at a low mean stimulus frequency (400Hz) but became undetectable beyond 3kHz. Its amplitude was smaller than that of the acoustic beat ASSR, which was evoked at low and high frequencies. Both ASSR types had maxima at fronto-central leads and displayed a fronto-occipital phase delay of several ms.CONCLUSIONS: The dependence of the 40Hz binaural beat ASSR on stimuli at low, temporally coded tone frequencies suggests that it may objectively assess temporal sound coding ability. The phase shift across the electrode array is evidence for more than one origin of the 40Hz oscillations.SIGNIFICANCE: The binaural beat ASSR is an evoked response, with novel diagnostic potential, to a signal that is not present in the stimulus, but generated within the brain.PMID:

&&&&　　泛指提供肉食的鸟类以及用其肉作原料加工而成的食品。禽有家禽与野禽两种。家禽是为获取肉、蛋为目的而经过人类驯养、选育的鸟类。野禽是通过狩猎得到的鸟类，有雉鸡、雁、野鸭、松鸡和鹧鸪等。目前大多数国家的许多野禽已被列入野生生物资源而被禁猎，因而禽制品通常是指家禽制品。在中国家禽主要有鸡、鸭、鹅；在美国和加拿大，火鸡仅次于肉用仔鸡而占第二位。　　　　家禽种类 　主要有6种。①鸡:是家禽中驯养最早数量最多的一种，约有5000年的历史。但直到19世纪前后，鸡肉与鸡蛋才成为大宗生产的商品。1982年全世界鸡的存栏数共约65.7亿只，其中苏联10亿只，居第一位；中国8.7亿只,居第二位。鸡有肉用型、蛋用型和肉蛋兼用型等品种。最有名的肉用鸡是白洛克、红布罗和中国的九斤黄、浦东鸡等。美国的肉鸡育种居世界之首，约占世界总产量的38％。②鸭:在中国2000年前已被驯养,也分肉用型、蛋用型和肉蛋兼用型等品种。中国的北京鸭因肉多、生长快（2.66千克／56日龄）、产蛋多(180～200个／年)而成为世界最著名的品种之一，现已遍及世界各地。美国年产1300万只肉鸭中，几乎全都是北京鸭。近年北京年产北京鸭 300多万只。用强制育肥的北京鸭，可获得重达3～3.5kg的填鸭，是著名的北京烤鸭的原料。③鹅：起源于雁。中国鹅和狮头鹅是中国的优良鹅种。成年狮头鹅体重可达12kg。用强制喂养法催肥的鹅，可获得肥大的鹅肝，是法国著名佳肴鹅肥肝的原料。④火鸡:又称吐绶鸡、七面鸟。是体重最大的肉用型家禽,26周龄可达10～14kg。第二次世界大战后在加拿大和美国部分地区广为饲养。中国有著名的舟山火鸡。⑤珠鸡：又名珍珠鸡。在意大利大规模饲养，但饲料转化率较低。⑥鸽：又称家鸽、鹁鸽。有肉用与通信用等类型。食用的通常是未成年的肉用鸽，4周龄重350～700g。广东中山县石岐产的乳鸽中外闻名。美、法、意大利、加拿大等国已将肉鸽列为优质肉食来源之一。美国棕榈和白屋鸽场年饲养肉鸽50～60万只。　　　　营养成分 　禽肉含有丰富的蛋白质、脂肪、无机盐和维生素(表1)。可食部分的蛋白质含量远比猪肉高；鸡肉中的必需氨基酸含量也高于瘦猪肉(表2 ）;禽脂肪熔点低(33～34℃),易于消化；作为重要的必需脂肪酸的亚油酸约占脂肪含量的20％；禽肉中还含有90～400µg的维生素E。　　消费 　由于家禽有最高的生长速度和最低的饲料消耗,良种肉鸡49日龄时体重可达2kg,饲料转化率高达2～2.5；肉的营养价值高,肉质细嫩多汁；适合于大规模生产。因而禽肉在肉类中的地位逐年提高。在日本,1983年鸡肉的人均年消费量为11.4kg，占肉类总消费量的38％，仅次于猪肉，居第二位；在美国鸡肉占肉类总消费量的25％，仅次于牛肉，亦居第二位；在中国，1985年城市人口中家禽的人均消费量为3.8kg，略高于牛、羊肉,也居第二位。　　　　禽制品分类 　按传统分类方法，禽制品仅指经过腌腊、酱卤等方法加工的中国传统风味禽制品；因为大都以全净膛的整禽加工，故又可称为整禽制品；广义而言，也包括屠宰和分割加工后的鲜冻禽产品和用去骨禽肉加工的禽肉制品（表3 ）。鲜冻禽产品分整只光禽和分割禽。整只光禽除按净膛程度分类外，还按年龄和质量划分等级。以往商业生产的主要品种是蛋用型淘汰鸡，现在主要是烤用肉仔鸡。美国的肉鸡生产早已超过家禽生产总量的90％。目前不净膛家禽正在减少，而分割禽(按禽体的自然部位解体)的比例却在上升。在欧洲和北美各国常用分部位的禽肉，经蒸煮、煎炸、炙烤、焖炖等烹饪方法，作为西餐的一道热菜。整禽制品主要是指中国传统风味肉制品，风味浓郁独特。禽肉制品除肉松、鸭松、鸡精等有较久历史外，火鸡制品是近几年在美国等地兴起的。　　　　　　加工 　家禽的商业性屠宰加工都在禽类加工厂中的机械化流水作业线上进行。1985年中国家禽的班屠宰能力达到80万只,年屠宰1亿多只。为了提高禽肉质量和耐贮藏性，必须做到：①屠宰前要使家禽充分休息，停食和饮水；②宰杀放血一定要彻底；③处理好浸烫温度与冷却或冷冻方法之间的相互关系；④屠宰中必须按卫生标准对胴体进行检验；⑤宰后快速冷却有利于控制微生物的孳长；⑥包装和分割间的温度应≤12℃；⑦不能用浸泡方法冷却禽体；⑧冷却禽的贮藏温度为-1～0℃;⑨冻结禽的贮藏温度为-18～-20℃；⑩防止冻结时的干耗。　　　　整禽制品
有多种传统的加工方法,因整禽制品种类而选用。①腌禽制品：用食盐、硝酸盐等腌制剂和某些香辛料对禽体加以干腌、湿腌或干湿混合腌制后所得的产品。腌制方法最初是作为禽制品的一种保藏手段，用以抑制细菌生长，增强防腐能力，使肌肉呈现鲜艳红色。现在冷冻已成为主要的保藏方法，腌制仅作为改善产品风味的一种加工工艺。腌禽制品属生制品，食前须经加热。著名的产品有南京板鸭、盐水鸭(鹅)、腌鸡等。②腊禽制品：将经过腌制的禽制品再悬挂在日光下晾晒、曝晒或在烘房内烘焙、烟熏所得的产品。因都在农历十二月（腊月）制作，故有是称。也是一种生禽制品，有较长的保藏期和特殊的腊香味。产品有腊鸡、腊鹌鹑和宁波腊鸭等。③干禽制品：一般是先进行干腌，然后再经晾吹等干燥处理，产品的含水量一般在10％以下，水分活度Aw一般小于0.75，以抑制细菌和霉菌的生长，可在阴凉干燥处保藏3～5个月。产品有成都风鸡、元宝鸡、南京琵琶鸭、湖南泥封鸡等。用同样的方法可制作风干鸡和风干鹅。④酱卤禽制品：禽体在酱油(或食盐)、糖、酒等调味料和香辛料配制的酱卤中煮烧，直至汁液浓缩收干为止。是市场销售量最大的一种熟禽制品，有德州扒鸡、道口烧鸡、清真卤煮鸡和苏州酱鸭。⑤熏禽制品：为了使产品获得一种烟熏味，一般在卤煮后再经烟熏或在紧烫后先烟熏再加以卤煮而成，如沟帮子熏鸡等。⑥烧烤禽制品：禽体在无水条件下进行热加工。热源可用木炭、煤、煤气或电，可直接置于火苗上方或利用热辐射，温度一般在200℃以上，经过烧烤,使产品表面产生一种焦化物，风味特殊。最著名的产品有北京烤鸭、广东烧鸭、 烧鹅、 烧乳鸽等。欧美最有名的烤禽为烤火鸡和烤鹅，是英国圣诞节和美国感恩节晚餐的传统食品。⑦糟禽制品：将白煮的禽体用曲酒、香糟调味制成，如苏州糟鹅。⑧醉禽制品：将白煮的禽体用黄酒浸渍，如浙江醉鸡。糟醉制品较难保藏，不便携带，生产受到一定限制。　　　　禽肉制品 　鸡精是烹饪老母鸡后汤的浓缩汁液。英国的白兰氏鸡精已有 100多年历史。目前许多国家用火鸡肉代替猪、牛肉生产火鸡火腿和火鸡肉卷。翅肉、禽皮等低档原料经乳化处理后制成火鸡香肠和肉糕。家禽的瘦肉可制成鸡肉松和鸭肉松。
