I attempted to root my phone using Android Forums' guide,
However, I realise now I made one deviation from the thread's instructions. Instead of using Siyah s2-5.0.1, I downloaded the most recently version available, s3-v1.8.9
I followed all the other instructions regarding Odin to the letter, but the root failed with the following messages:
&ID:0/004& Added!!&ID:0/004& Odin v.3 engine (ID:4)..&ID:0/004& File analysis..&ID:0/004& SetupConnection..&ID:0/004& Initialzation..&ID:0/004& Get PIT for mapping..&ID:0/004& Firmware update start..&ID:0/004& boot.img&ID:0/004& NAND Write Start!! &ID:0/004& &ID:0/004& Complete(Write) operation failed.&ID:0/004& Added!!&OSM& All threads completed. (succeed 0 / failed 1)&ID:0/004& Removed!!
The 'Firmware upgrade encountered....' message displays when I attempt to boot the phone normally, but I can still boot the phone into download mode.
Does this mean my device is currently soft-bricked?
I'd like to try rooting again, this time with the Siyah firmware version mentioned in the guide. I haven't done anything yet after the root failed, I thought it might be better to ask here first, where people know a lot more about Android than I do
What should my next step be to get my phone back into working order, preferrably rooted rather than going back to my carrier firmware?

Try flashing the correct kernel. You should be able to boot up again after that.
If not, you may need to flash back to stock, and start over.

I'm using Odin 3.04, which I downloaded from the link contained in the guide.
Is it possible the problem is being caused by Odin, and not the firmware .tar?
Note that I can still access download mode on my phone after the 2nd attempt, so at least my device is still 'with us' :P
Any other rooting GTI9100T guides for dummies someone knows of that I could try using?

Because you keep flashing a kernel for the S3...
Flash the S2 kernel.
This is your kernel if you are on ICS.. Download the .tar file.

I just went to download the file, and it's an S2 kernel. (Siyah-s2-v5.0.1.tar)

Man I'm such a noob & ah well, only one way to learn & through mistakes and advice from people who know more than me.
This time I used s2-5.0.1 and I got a nice big green 'pass' from Odin :)
I'd like to get rid of the Vodafone bloatware on my phone. How do I go about doing that?
I'd also like to install a new ROM.
Are there any ICS ROMs users can recommend I install? What about JB? Are there any stable JB ROMs out there users can recommend?
I'd also appreciate some help in finding and installing the correct modem for my I9100

I'm just glad you made your first mistake on a kernel :p
Firmware can be a little less forgiving.
I have no idea, about S2 ROM's sorry. I do hear good things about the new JB firmware though.
I'll let others with S2's leave you the recommendations. Glad you got it all sorted.

You'll be alright.... For the OP's case, the Siyah kernel is safe.
You're safe as well, with 4.1.2.... Just don't go back to 4.0.4, and be aware. ;)

Well, you would not have any real need to. JB is a much better OS.
You are safe with the Siyah kernel, so you can pretty much do whatever you want.
The brickbug is pretty easy to avoid. These stock firmwares are the ones to avoid.
Actually confirmed firmwares having the emmc bug :
