随着我国日益走向国际化,餐饮业也面临着走向世界这个问题。要将中餐菜单翻译成英文,就先得了解中餐菜名的构成及命名方法。中餐菜名通常由原料名称,烹制方法、菜肴的色香味形器、菜肴的创始人或发源地等构成。这种反映菜肴内容和特色的命名方法叫做写实性命名法,此外还有反映菜肴深刻含义的写意性命名法。
当然最时尚的,最能让外国朋友点得明白,吃得开心,当然是要用图文并茂,秀色可餐的中英日三文专业菜谱。
由于汉语和英语的差异很大,我们在把中餐菜名由中文译成英文的时候,应该采用写实性命名法,尽量将菜肴的原料、烹制方法、菜肴的味型等翻译出来,让客人一目了然。将以下几点"公式"(中英文对照)介绍如下,以供大家参考。
一、以主料开头的翻译方法
1、介绍菜肴的主料和辅料:

在中餐菜名翻译成英文的过程中,可以采用多种不同的方法,而且每一道菜都可以从不同的角度入手进行翻译。例如,川菜中的"宫保鸡丁"这道菜就有以下几种译法:

3.diced chicken with chilli and peanuts
由此可见,中餐菜名的英译方法是灵活多变的。至于我们在翻译中应该采用哪种方法,可根据各人的习惯和具体情况确定。不过只要掌握了第一种以主料开头的翻译方法,对其它种类的翻译方法便可以触类旁通,我们只需根据文中所列出的翻译公式去相应作一些交换就行了。

小小一本菜谱,是餐厅的一张名片。以往招待的都是本地客人,只要本地客人能看懂就行了,每个餐厅的菜谱都一样,只有分类、菜名和价格,看不懂直接问服务员,从来没有觉得有问题。

问一个专业的翻译人员就知道,菜谱的翻译是很特殊的。中国人把饮食与文化相关联,所以中国很多菜名听上去很“文化”,例如“佛跳墙”、“福寿双全”、“龙马精神”等,让人不知其然;而在西方国家,饮食就是“Food
Beverage”(食品和饮料),菜名就是原材料加烹饪方法。因此,翻译中文菜谱就需要清楚菜的原材料和制作过程,对不熟悉餐饮的人来说,这是很高的要求。
此外,中国人吃的蔬菜就有600多种,比西方多6倍,还有几百种的禽类、肉类、野味、海鲜及其不计其数的不同部位,数百种调料、数十种烹调方法,在翻译过程中常碰到“裙边”、“花胶”、“雪蛤”等一般人根本不知何物的原料;即便是肉类,也有“肴肉”、“咸肉”、“腊肉”、“烟肉”、“白肉”、“烧肉”(广东烧味)等区分;鱼类更是可怕,简直可以与鱼类学家的专业手册相媲美,“鲥鱼”、“t鱼”、“真鲷”、“黑鲷”、“鲳鱼”、“鲮鱼”、“多宝鱼”、“东星斑”、“老鼠斑”、“海红斑”、“银鳕鱼”、“海龙”、“海马”等等,所以菜谱翻译是一种行业经验的积累,不是一般的翻译公司可以做得好的。

巧译中国菜名
中国菜受到全世界的普遍欢迎,但是如何将各个菜肴准确翻译成英文,却不简单。在翻译时,我们应当综合考虑菜肴的用料、烹饪方式、文化内涵等多种因素。
中国菜名大多数以用料(包括主料和作料)名称和烹饪方式(包括容器)构成,这类菜名相对好译,如:
有些菜肴,我们可将其烹饪方式略去,如豆豉炖鱼(fish in black bean sauce), 葱烧海参(sea
cucumber with scallion)。
需要注意的是,翻译菜肴前,一些用料的译法应规范统一,如“木须”是egg,“翡翠”是spinach,“芙蓉”是egg
white(现在音译为foo yung,如“芙蓉蛋” egg foo yung),“八宝”和“八珍”一般译为eight
delicacies,“双冬”是mushrooms and bamboo shoots,“西施舌”是clam,“金钩吊玉牌”是bean
sprouts with tofu。
译者在翻译时,也须参考菜肴的烹饪方式,如不少菜名中的“玻璃”是指在菜肴上浇以透明的糖浆,可译为blazed,如blazed
squid slices(玻璃鱿鱼)。“宫保”原译为fried with chili/in hot sauce,现在也音译为kung
pao,如“宫保鸡丁”(kungpao diced chicken)。
有些菜名强调味道,如“香酥”(crisp fried),“糖醋”(sweet and sour,“古老肉”也译成sweet
and sour pork)。有些菜名可借用英语原有的一些说法,如“清汤”(consomme/consomme of),“拔丝”(in
hot toffee)。
带有文化色彩的菜名比较难译,翻译时不妨先音译或意译,然后说明该菜的具体用料等。此外,还可以讲述一下菜肴的典故,以引起用餐者的兴趣。如“叫花子鸡”(beggar’s
chicken,后可附其来历),“东坡肘子”(Dongpo pork joint ,后可补充介绍苏东坡其人)。
直译菜名没难度
其实直译菜名可以追溯到以《YanCanCook》(甄能煮)在国外成名的偶像级厨师甄文达。当年他受到加拿大电视台邀请客串录制清谈式烹饪节目,并以流利而自然风趣的美语轻松地控制好现场气氛,在介绍材料时更夹着一两句粤语,比如他在介绍“圆白菜粉丝汤”时,会一边用手指头在被水泡得发白的粉丝中搅和,一边说“look,look,it'sveryeasytorememberthename,it'sfunsee(看,看,这个材料很容易记,它叫粉丝)”。美国的老太太们不但听懂了这种有地方特色的语言,更对此十分青睐。但前提是,他随后也会把真正的译名和菜式的材料说出来,这样既有风趣的效果也不会引起歧义,跟我们把“TalkShow”直接翻译成“脱口秀”同样地自然。
中国就要举办奥运会了,会有更多的外国游客远道而来,到时候,面对坐在餐桌前点菜的客人们,怎么去解释清楚我们的美味佳肴呢?
(一)地方菜可直接用拼音:
在美国和欧洲的中餐馆中,中文菜单翻译英文最直接的方法就是“音译”。音译就是把菜品的中文名字用拼音写出来,这种方法简洁直接也很有特色。比如豆腐,虽然可以译成“大豆乳酪”,但更多的是用“TOFU”一词即可,美国人点菜已经会正确地说“TOFU”,还知道它有益健康呢。还有像“担担面”(DAN DAN NOODLES)“云吞”(WONTON)等餐点,直接用拼音命名,含有一种“我有人无”的自豪。反正国外没有相对应的食品,那么就用我们的称呼好了。
这种方法,在其他国家的餐饮里也屡见不鲜:日本寿司(SUSHI),日本清酒(SAKE),朝鲜泡菜(KIMCHI)都是直接用音译,这已经在西方获得广泛的采用。而现在国内所说的法国的“香槟”,意大利的“比萨”都是原汁原味音译而来,如今还有谁不知道那些是什么东西呢。
(二)意译有三大讲究:
不用说,这是最要功夫的译法。意译法仔细讲来也分3种:
以用料为主的翻译――主要介绍菜肴的主料和配料,先写好其中的鸡肉、牛肉或海鲜的种类名称,再加上青菜、果仁等配料的名称,像香菇(BLACK MASHROOM)、鲜笋(BAMBOO SHOOT)都是中餐常用的材料,外国人多数不会大惊小怪,会照吃不误。
以味道为主的翻译――在用料之外,强调调味的作料,把椒盐、麻辣、甜酸等味道注明在菜单上,这对外国人点菜会有很大帮助。要知道外国人给予中国菜“用舌头来吃的饭菜”的美誉,很多时候他们来吃的就是味道。加了青葱、芝麻等,都是特色风味,不妨一一写出。不过,在北美有一道很受欢迎的菜“甜酸肉(鸡)”SWEETAND SOUR PORK(CHICKEN),与国内所说的“糖醋里脊”并不完全相同,它的色泽金黄,味道也偏甜,有果汁味,可能吃惯了这道菜的外国人到了国内会弄混。
以烹饪法为主的翻译――把常用的煎炒烹炸方式译入菜名,既符合中国菜的传统,又能显示中国菜的制作艺术。菜肴爆炒的浓香、油炸的酥脆、清蒸的清淡都可以充分在文字中显示出来。
在海外,红烧一般会明说是用酱油(SOY BEAN SAUCE)做的,而不是笼统地说是BROWN
SAUCE,这样不喜欢酱油的外国人就可以不点这道菜了。
(三)巧用人名地名:
这个译法似乎又回到了音译法,但实际上却增加了更多的文化底蕴。细看外国菜谱会发现,法国的奶酪、德国的香肠有很多都注明了产地和风味,而且他们的这些地名即使出现在英文菜单上,也全都使用原文拼写。所以我们的“西湖牛肉羹”、“蒙古烤肉”、“上海酱鸭”,也可以写上这些特色地名的汉语拼音,或者加注“SHANGHAI STYLE”(上海风味),顺便也给外国朋友们来点地理知识。
同样,借类似“东坡肉”、“左公鸡”、“麻婆豆腐”等菜式中的人名,就可以向外国人介绍一下这是中国诗人苏东坡,著名将军左宗棠等人所喜爱的食品以及四川妙手阿婆的拿手菜等,增加进餐时的趣味话题和交流。
两点注意:
1.使用所在地通用名称和烹调法,可以取得事半功倍的效果。比如“叉烧肉”,只要写成“BBQ烤肉”(涂了浓调味汁的烤肉),北美人就心领神会了。而我们常说的“荷兰豆”,在美国和加拿大被称为“雪豆”,翻译时需要注意。
2.我们中华民族历来是礼仪之邦,要尽量避免暴力、性等字眼。比如“童子鸡”,只要写成“很嫩的鸡肉”就可以了,有的餐馆翻译成“未过性生活的鸡”就会被笑话了。想来咱们老祖宗发明这道菜的本意,也只是要标榜材料的鲜嫩爽滑而已,没有谁要打听鸡宝宝的私生活。
